Beef stir-fry
Ingredients:
- 1 pound stir-fry beef
- 1/3 cup beef broth
- 1 tablespoon fish sauce
- 2 teaspoons sweet chili sauce
- 3 cloves garlic - pressed or chopped
- 2 teaspoons sesame oil
- 1 tablespoon sesame seeds
- 1 teaspoon honey
- 1 bell pepper
- 1/2 cup matchstick carrots
- 1 medium onion
- 1 cup sliced mushrooms
- 1 cup basmati rice
- 2 cups beef broth
- 1 tablespoon olive oil
Instructions:
- In a large bowl, whisk beef broth, fish sauce, sweet chili sauce, sesame oil, honey and garlic. Add in stir-fry beef and let marinate for at least 20 minutes and up to 8 hours.
- Julienne cut bell pepper and onion. Set aside.
- Boil 2 cups of beef broth and add basmati rice. Simmer for 20 minutes or until tender. Turn off heat and cover.
- Heat a wok or deep pan to medium-high heat and add 1 tablespoon olive oil. Add stir-fry beef and mushrooms, matchstick carrots, onions and peppers. Cook 10-15 minutes until vegetables and beef are fully cooked.
- Place a half cup of basmati rice on plate and top with stir-fry mixture.
- Sprinkle sesame seeds on top.
Notes:
- You can use any beef you like. I prefer top sirloin.
- If you don't like beef, you can substitute any protein such as chicken, shrimp or pork.
- Any color bell pepper is fine.
