Beef stir-fry

 Ingredients:
  • 1 pound stir-fry beef 
  • 1/3 cup beef broth
  • 1 tablespoon fish sauce
  • 2 teaspoons sweet chili sauce
  • 3 cloves garlic - pressed or chopped
  • 2 teaspoons sesame oil
  • 1 tablespoon sesame seeds
  • 1 teaspoon honey
  • 1 bell pepper
  • 1/2 cup matchstick carrots
  • 1 medium onion
  • 1 cup sliced mushrooms
  • 1 cup basmati rice
  • 2 cups beef broth
  • 1 tablespoon olive oil
Instructions:
  1. In a large bowl, whisk beef broth, fish sauce, sweet chili sauce, sesame oil, honey and garlic.  Add in stir-fry beef and let marinate for at least 20 minutes and up to 8 hours.
  2. Julienne cut bell pepper and onion.  Set aside.
  3. Boil 2 cups of beef broth and add basmati rice. Simmer for 20 minutes or until tender.  Turn off heat and cover.
  4. Heat a wok or deep pan to medium-high heat and add 1 tablespoon olive oil.  Add stir-fry beef and mushrooms, matchstick carrots, onions and peppers.  Cook 10-15 minutes until vegetables and beef are fully cooked.
  5. Place a half cup of basmati rice on plate and top with stir-fry mixture.  
  6. Sprinkle sesame seeds on top.

Notes:
  1. You can use any beef you like.  I prefer top sirloin.
  2. If you don't like beef, you can substitute any protein such as chicken, shrimp or pork.
  3. Any color bell pepper is fine.
